Why did I feel the urge to create this space? Why is it so important for me to share what I have learned\u2014sometimes through pain?<\/p><p>I grew up on the shores of the Mediterranean. A simple place, close to the sea. We ate what the earth provided, we lived by the rhythm of the sun, savoring the taste of real things\u2014just the essentials.<\/p><p>At 18, I decided to leave my country for another European country. I was young, curious, and eager to discover the world. Three years later, around the age of 21, my first health issues began. A pollen allergy. Nothing serious at first, I told myself. Then it escalated: fruits, dairy products, nuts, and flours\u2014all due to gluten. Each year, a new allergy seemed to appear.<\/p><p>\"It continued. Fruits. Dairy products. Dried fruits.
